In the wine cellar of the Taj Coromandel Chennai rests a rare spirit, waiting to grace the table of the very discerning: only nine pink-gold bottles of them are available. Among the finest examples of the pink bubbly blend concieved (50% Pinot Noir, 40% Pinot Meunier and 10% Chardonnay from the Champagne region), the sublime salmon hue is achieved by assemblage, the process of blending sparkling white with still Pinot Noir, picked from old-growth La Marne vineyards for Rosé Champagne. The bouquet (of red fruits in the front and lightly smoky notes behind) pairs best with the superlative vegetables, seafood and desserts at Prego, their Italian restaurant.
